Hello, friends! Indian food is one of my favorite cuisines, and I have been experimenting in cooking it recently. It’s still a work in progress, but I love playing with different flavors and hopefully creating something delicious! Today I would like to share with you a recipe for a delicious, healthy lunch that I created the other day. The dish is sautéed chicken in a coconut curry sauce over a bed of white rice. It’s easy to make and super flavorful!
A few strips of chicken, cut into pieces (I used pre-cooked chicken)
1/2 C of a curry sauce of your choice (I used Coconut Tamarind Sauce by the Kerala Curry Brand)
1-2 TB water
1-2 sprigs of cilantro
1 C of white rice (I used a pre-prepared rice to make things easier. For this recipe, prepared rice is preferred.)
Step #1: Cook your chicken! I heated up a pan coated in a bit of coconut oil and sautéed my chicken over it on medium heat. Since mine was pre-cooked, I was really just heating it up, but if you’re cooking with raw chicken, sauté until golden brown.
Step #2: Add in your curry sauce! Pour a bit of sauce over the chicken and decrease the heat a bit. Add the water and allow the chicken and curry to simmer together until the sauce thickens.
Step #3: While this is cooking, go ahead and heat up your rice. Since mine came cooked in a bag, I just popped it in the microwave for 90 seconds.
Step #4: Zest it up! I love cilantro, so I chopped up a few sprigs of cilantro and added it to the chicken and curry mix once it had cooked together and thickened. This adds an element of freshness and some beautiful color. Feel free to add salt to taste, as well.
Step #5: Pour your curry and chicken over the rice and garnish with cilantro and enjoy!
